Amish Overnight Coleslaw
The emphasis here is on the veggies and a sharp/sweet flavor, not the usual milky dressing. VERY easy to make, but it has to "steep' overnight.

1/3 of a red bell pepper
1/3 of a green bell pepper
1/2 cup shredded carrots
1/4 cup + heaping 1/2 tsp sugar
Heaping 1/4 tsp celery seed
Heaping 1/4 tsp dry mustard
1/3 cup vinegar
1/4 tsp salt
1/4 cup canola or vegetable oil

I skipped chopping cabbage and carrots by using a pre-shredded coleslaw mix.
A friend of mine makes extra dressing and puts it in a jar with fresh carrots, cauliflower, and onions and leaves them to become yummy pickled veggies!
