Apple Chip Cake

  • 30 minutes to peel, core and chop apples, unless you have frozen ones
    10 minutes to assemble
    40-60 minutes to bake


  • 1 cup vegetable or canola oil
    2 cups granulated sugar
    2 eggs
    3 cups chopped apples
    1 cup chopped nuts
    1/2 tsp salt
    1 tsp baking soda
    1 tsp cinnamon
    1 tsp vanilla
    3 cups flour (sifted--but we'll do that together in the podcast)

  • 9x13" pan (or 8x8" for half a batch)
    Large sharp knife
    Sifter or fine mesh sieve


  • Preheat oven to 350°
    Peel, core, and chop apples, as needed
    Chop nuts
