Shortbread Jammers : YOU HAVE TO TRY THESE!
Soft,sweet, almost creamy shortbread bars topped with your favorite jam. These are incredible! (And very easy to make, of course.)

TOTAL: 1 hour
1/2 lb unsalted butter
3/4 cup granulated sugar (or baker's ultrafine sugar)
1 tsp fine sea salt
1 tsp vanilla extract
2 cups all purpose flour PLUS
1/3 cup rice flour (OR total of 2 1/3 cups all purpose flour or pastry flour)
1 cup thick fruit jam or preserves

Set butter out to warm to room temperature
Preheat oven to 325°
