Ingredients

  • 4 cups all-purpose flour plus extra for cutting board and hands
    1-2 Tbsp olive oil
    1 Tbsp sugar
    1 tsp salt
    1 tsp baking soda
    4 Tbsp salted butter, cold
    1 large egg
    2 cups buttermilk
    1 cup coarsely chopped roasted red peppers
    1 cup coarsely crumbled feta cheese
    4 Tbsp coarsely chopped fresh basil
    1 tsp coarsely ground black pepper

  • 9-10" cast iron skillet
    Large bowl
    Smaller bowl
    Wooden or silicone spoon

Do-Aheads

  • Move oven rack to upper third of oven and preheat oven to 425°
    Roast your red pepper, if not using commercially-jarred ones

This recipe was new to me, and now that I’ve tried it, I have modified the amounts and types of some of the ingredients. Use these, rather than the ones in the podcast!
