Pumpkin Alfredo with Chicken & Mushrooms : A Cookalong Original

This incredibly smooth, cheesy alfredo is just a tiny bit sweet, thanks to pureed pumpkin. It's gorgeous, rich, creamy, garlicy, and cheesy, and you will make this again and again.

  • 9 oz linguini noodles or wide egg pasta
    2 Tbsp butter
    5 garlic cloves
    1 cup canned pumpkin
    2 1/2 cups heavy whipping cream
    1/2 cup grated parmesan cheese
    8-12 oz cooked chicken breast
    1/4 lb baby bella mushrooms, sliced
    1 tsp coarse sea salt
    1/2 tsp black pepper
    Sprig of fresh rosemary (or thyme or sage)

  • Pot for cooking pasta
    Sharp knife
    2 forks, for shredding chicken


  • Start water boiling for cooking pasta
    Cook chicken breast, if necessary
