Persian Cucumber Salad with Dill & Lemon

Ingredients

  • Persian cucumbers -- you choose the number
    Fresh Dill -- LOTS
    Salt -- till it tastes right
    Lemon zest
    Lemon juice
    Dried cranberries -- a handful
    Feta cheese -- till it looks right (Optional)
    Good extra-virgin olive oil

  • Chef's knife (or paring knife)
    Rolling pin
    Cutting board
    Bowl big enough to hold all the chopped cucumber

Do-Aheads

  • Zest and juice a lemon (or two, if they're small)

Additional Notes

This is really very good without the Feta, if you don’t want dairy in it. You could choose to replace the cranberries with Kalamata Olives….
