  • 1 15oz can corn kernels, drained
    1/4 cup finely chopped red bell pepper
    3 Tbsp mayonnaise
    1/4 tsp kosher salt
    1 tsp granulated sugar
    1/8 tsp black pepper
    1 Tbsp unsalted butter
    3/4 - 1 cup shredded mozzarella cheese
    1 scallion, thinly sliced

  • Medium bowl
    8-10 inch cast iron or oven-safe skillet


  • Drain corn
    Chop red bell pepper
    Slice scallion
    Shred mozzarella, as needed
