Healthy Coconut Date Bars

Sweet, rich, and chewy, despite being "healthy", these bars are good snacks and excellent for breakfast! No refined sugar, plenty of oats, and it's hard not to eat three of them at a time. (So much for healthy.)

1/2 cup shredded coconut
10 oz pitted Medjool dates (about 28)
1/2 cup walnuts
3/4 tsp sea salt (divided)
1/2 tsp baking soda
1 egg
1/4 cup plus 1/2 tsp coconut oil (divided)
1 tsp lemon juice

The coconut is part of the flavor more than the texture of it. And I discovered these are great for breakfast!
