  • 1 pound very lean ground beef
    3 Tbsp taco seasoning (I use Penzeys Original)
    1/4 cup water
    10-14 flour tortillas
    2 cups enchilada sauce (I use Old El Paso or A La Orden)
    3 cup shredded Cheddar cheese (or 2 cups sharp cheddar and 1 cup Mexican blend)
    Sour cream and/or fresh cilantro for serving
