  • 4 Tbsp chili powder (use a mix of types for extra richness and getting the heat just right)
    2 1/2 tsp ground coriander
    2 1/2 tsp ground cumin
    1 1/2 tsp garlic powder
    1 tsp oregano
    1/2 tsp cayenne pepper
    1/2 tsp unsweetened cocoa
    1 1/2 lbs lean ground beef
    1 small onion
    1/2 green pepper
    28oz can (or 2 14/.5oz cans) diced tomatoes
    15oz can tomato sauce
    2 15oz cans kidney beans
    15oz can black olives
    1/2 cup frozen corn
    2 tsp salt
    Seasoned rice vinegar (or plain vinegar plus a pinch of sugar) or lime juice

Additional Notes

Beyond Meat Burger is a really tasty replacement for the ground beef, if you prefer a vegetarian version.
