Cindy’s Biryani Curried Rice : A Cookalong Original

Ingredients

  • 1 1/2 cups uncooked brown basmati rice
    2 1/4 cups plus 1/3 cup vegetable stock
    1 bay leaf
    1/4 tsp salt plus 1/2 tsp salt
    1/3 cup chopped onion
    1/3 cup chopped red bell pepper
    1/2 cup frozen peas
    1/3 cup peeled apples, chopped small
    1/3 cup raisins
    1 large clove garlic
    1 1/2 Tbsp ghee
    1/2 tsp sugar
    1/2 tsp ground turmeric
    1/2 tsp ground cumin
    1 1/2 tsp garam masala
    1/2 tsp ground coriander
    1/4 tsp crushed red pepper flakes
    1 tsp lime juice
    1/2 cup salted cashews or mixed nuts, toasted (no need to toast if dry roasted)

Additional Notes

This makes a nice accompaniment to fish and chicken. (But it definitely holds its own as a main dish.)
