  • 1 3/4 cups all-purpose flour
    2 tsp cinnamon
    1/2 tsp ground ginger
    1/2 tsp ground cardamom
    1/2 tsp ground nutmeg
    1 tsp baking soda
    1/2 tsp salt
    2 cups applesauce
    1 1/4 cups brown sugar
    2 large eggs
    2 tsp vanilla extract
    1/2 cup vegetable oil
    8 oz cream cheese or neufchatel
    1/4 cup granulated sugar

  • 16 muffins


  • 2 large bowls
    Medium bowl
    2 forks
    12-cup muffin pan PLUS 4 cups in second muffin pan
    Cupcake liners OR nonstick cooking spray


  • Preheat oven to 375°
    Allow cream cheese to warm to room temperature
