  • Less than 15 minutes, once your cheese is grated and your pasta water is hot.


  • Kosher salt
    16 oz. linguine or spaghetti
    4 tbsp. butter
    2 tbsp. extra-virgin olive oil
    Coarsely ground black pepper
    1 1/2 cups freshly grated Pecorino Romano, plus more for serving
    1 1/2 cups freshly grated Parmesan, plus more for serving

  • Pasta pot or Large pot & Collander
    Cheese grater
    Pepper grinder
    Large skillet
    2 cup glass measure OR medium bowl and large ladle


  • Bring water in pasta pot to boiling
    Grate cheese
