Ingredients

  • 1 15 oz. box yellow cake mix
    4-6 fresh peaches, peeled and sliced, or 16 oz. frozen peaches, unthawed
    6 oz. peach jello
    4 large eggs
    1 cup vegetable oil
    1 teaspoon vanilla extract

    Frosting:
    2 cups brown sugar
    2/3 cup heavy cream
    1/2 cup (1 stick) butter
    1 teaspoon vanilla extract
    1/4 tsp salt (optional)

Equipment

  • 9x13" baking dish
    Non-stick cooking spray
    Large saucepan
    Large bowl of ice water (to speed up the cooling of the frosting, if desired)
    Electric Mixer

Do-Aheads

  • Preheat oven to 350°
    Peel and slice the peaches
    Prep ice bath (bowl of ice water) before starting the frosting

Additional Notes

I decided this made too much frosting. The cake is already very sweet and moist, and would be good even without frosting, but the frosting is yummy. I’d recommend making only half as much as indicated in the podcast and the ingredient list, or at least not trying to put all the frosting on the cake. You can see from the photos that the cake seems a little overwhelmed.
