Ingredients

  • 2 1/2 cups all-purpose flour
    2 tsp baking powder
    1 tsp baking soda
    2 tsp ground cinnamon
    1 1/2 tsp salt
    1 tsp ground ginger
    1/2 tsp ground nutmeg
    1/8 tsp cloves
    2 cups applesauce
    22 Tbsp unsalted butter (2 sticks + 6 Tbsp)
    2 cups packed brown sugar
    2 eggs
    1 Tbsp + t tsp vanilla extract
    1/4 cup heavy whipping cream
    3/4 cup confectioners' sugar
    1 cup toasted chopped pecans

Do-Aheads

  • Move oven rack to center of oven
    Preheat oven to 350°
    Melt 16 Tbsp unsalted butter
    Spray pan with nonstick spray
    Toast and chop pecans, if necessary
    Sift powdered sugar

Additional Notes

This cake will keep well on the counter 3-4 days if covered with plastic wrap. It also freezes well if it’s packaged air-tight.
