Rustic Strawberry or Blueberry Tart

A lovely tart of berries or stone-fruit, baked in an open crust. Bright, sweet, delicate and fresh. So very easy, with just a few ingredients you probably already have on hand, it's the perfect dessert for any meal, whether it's for company or just you.

Ingredients

  • 1 cup flour
    1/4 cup vegetable oil
    1 1/2 Tbsp cold water
    1/4 tsp salt
    1/8 tsp baking powder
    1 cup fresh or frozen blueberries or sliced strawberries
    1/4 cup sugar for blueberries OR 1/8 cup sugar for strawberries
    1 tsp lemon juice
    1/4 tsp cornstarch
    Pinch of salt
    OPTIONAL: 1/2 tsp cinnamon (for blueberries only)
    1/2 Tbsp butter or margarine
    2 tsp whipping cream, milk, or water
    Sparkling sugar, raw sugar, or decorator's sugar

Additional Notes

Fresh or frozen RASPBERRIES are also good in this! Add ¼ tsp Almond Extract to the crust and a pinch (about 1/16 tsp) of ground cardamom to the berry mixture.
